This work evaluated the antioxidant and antimicrobial activity of leaf extracts, stem and leaf depleted of a commercial crop of Stevia Rebaudiana, located in the municipality of Olaya (Antioquia), through the methods ABTS, DPPH, Folin-Ciocalteu and discs Kirby-Bauer versus Staphylococcus aureus (Gram positive) and Escherichia coli (Gram negative); also the modification of wells in PDA agar with Fusarium oxysporum. The results for the methods ABTS, DPPH and Phenols total indicated greater antioxidant activity (P < 0.05) for the extract obtained from the leaf, with values of 648 μm Trolox equiv/g weight-1, 541 μm Trolox equiv/g weight-1, and 10.2 mg Gallic acid equiv/g dry mass-1 Respectively. Additionally, the antimicrobial activity of the extracts on S. aureus and E. coli was evaluated, showing a halo of inhibition, as a trace of bacteriostatic activity, in the three extracts evaluated (leaf, stem and leaf exhausted). Likewise, the percentage of inhibition of the growth of the fungus F. Oxysporum against the extracts was quantified, obtaining as a result a 50% fungicide activity for the leaf extract, 28% in stem and 12% in depleted leaf, being the extract from leaf which It showed greater fungal activity (p<0.05). Finally, this work allows to know the potential antioxidant and antimicrobial that possesses the extract of Stevia rebaudiana, in order to take advantage of the residues (stem and leaf exhausted) that are generated after the process of selection of vegetal material and extraction, generating new tools and information about the properties and benefits that can be obtained from this plant. Keywords: Stevia rebaudiana, extraction, antioxidant activity, antimicrobial activity.
